Modern diets rightly recommend those with an over-high cholesterol level to reduce their intake of saturated fats. They suggest that fish, poultry and vegetable should replace fattier meats such as pork , lamb and beef. They also suggest increasing polyunsaturated oils in the diet. This is sound advice (especially when they are combined with monounsaturated olive oil), but only when taken with enough vitamin E. Without increasing vitamin E the result can lead to a heart attack.

   Modern Diet  Our modern diet often lacks vitamin E  for example it is discarded when flour is refined and when oil is chemically extracted. This is another instance of the need to choose unrefined foods in this case whole meal bread and cold-pressed oils. A few of the foods in which vitamin E is found are lettuce, parsley, spinach, mustard leaves, potatoes, leeks, carrots, cucumber, brown rice and honey.
  It is not yet fully recognized that drastically reducing the intake of saturated fats alone could actually encourage the metabolism to produce even more cholesterol to compensate for the imposed reduction. The metabolism needs the added help of fibre and vitamin-rich foods, together with plenty of exercise, to prevent it from going into `overdrive' and producing even higher cholesterol levels.

   The Body's Key The body's key to coping with cholesterol is lecithin. This is an emulsifier that works rather like washing-up liquid in a sink of dirty dishes; it breaks the fat up into smaller particles and disperses it. Lecithin helps cholesterol to pass efficiently through the arteries to do its essential work. Without it the particles of cholesterol are too large to pass through, so the level of cholesterol rises and some of it becomes lodged in the arterial walls, causing arteriosclerosis. Circulation becomes impaired as there is less and less room for the blood to flow through, and greater effort has to be exerted by the heart. Sufferers from heart disease characteristically show an increase in blood cholesterol and a drop in lecithin, so it is obviously vital to supplement the diet with additional lecithin.

  Lecithin granules are easily obtainable and are not difficult to use (capsules do not supply a large enough quantity). The results will be very beneficial and greatly help to lower blood cholesterol. Two tablespoons of lecithin taken daily will reduce cholesterol in the blood by breaking the fats down so that they can be absorbed through the arterial wall and utilized by the tissues. Lecithin also increases the bile acids, which in turn decrease blood cholesterol.
