White Meat
Chicken, the
white meat of turkey and all game closely follow fish as the
best source of protein for a healthy heart. Chicken and turkey
can be prepared in such a wide variety of ways. They are low in
harmful fats, especially when the skin is removed. Compared
with domestically reared creatures, all game is low in fat. I
suppose that the struggle of surviving in the wild keeps them
lean!
GRILLED CHICKEN
A grilled chicken is one of the nicest foods at
any time, and particularly in summer. Everybody likes it and
chickens are reasonably priced, within even the most slender
means.
For good grilled chicken buy a first-rate fresh bird or chicken
quarters if you can't face jointing the bird yourself, but
remember that chicken pieces are more expensive.
Rub the pieces with lemon juice, fresh lemon thyme or marjoram, sea salt
and pepper. Sprinkle with olive oil.
Heat the grill. Place the chicken on the wire grid, skin side up.
Turn after S minutes and seal the other side. Turn them over
again and baste with juices from the pan. Lower the heat a
little and cook for another 5 minutes on each side (a total
grilling time of about 20 minutes).
The chicken joints should be golden brown with slightly crispy
skin. They must be cooked so that the juices run clear, not
pink, at the deepest part of the joint when gently pierced with
a skewer.
Spread a mixture of salad leaves and roughly chopped herbs
(parsley, chives, a little mint, a little fennel) on a long
dish. Put the chicken on to this bed of green and add a few
generous lemon wedges.
Drain off the fat then sprinkle the hot juices over all
before serving, together with some more pepper, if you like,
and a few drops of fresh lemon juice.
