Ingredients: (makes 150m1/¼
pint) 2 tbsp skimmed milk
1 tbsp lemon juice
225 g/8 oz low-fat quark or fromage frais
sea salt to taste
Method:

Measure the ingredients into a liquidizer
in the order listed above. Cover and blend for 30 seconds or
until smooth. Chill.

Snipped chives are excellent stirred into
this, to accompany meat or fish, or to top a baked jacket
potato. Serve as a dressing for salad, or as a sauce for a
mousse with the addition of some freshly chopped tarragon or
dill. If using in a hot dish, add at the last moment.
