Low Cholesterol Soured Cream Recipe

Ingredients: (makes 150m1/¼ pint)

2 tbsp skimmed milk
1 tbsp lemon juice
225 g/8 oz low-fat quark or fromage frais
sea salt to taste
 

Method:

  • Measure the ingredients into a liquidizer in the order listed above. Cover and blend for 30 seconds or until smooth. Chill.

  • Snipped chives are excellent stirred into this, to accompany meat or fish, or to top a baked jacket potato. Serve as a dressing for salad, or as a sauce for a mousse with the addition of some freshly chopped tarragon or dill. If using in a hot dish, add at the last moment.
