Vegetable Main Dishes
A
main dish based on vegetables can be made nutritionally
complete with the addition of a little
meat, cheese, egg or other protein, or can be completely
vegetarian if based on pulses and
served with rice, bread or another starch. In this chapter
you'll find some very tempting
ideas for vegetable main dishes both with and without meat.
Stuffed vegetables make super main dishes: here are recipes for
peppers filled with rice and mushrooms, Zucchini (courgette)
stuffed with a herbed lamb mixture and served with a rich egg
and lemon sauce, marrow with a curried beef filling, US
eggplant (aubergines) stuffed with a rice, ricotta cheese and
nut combination, and cabbage leaves rolled around bacon and
chestnuts.
You'll also find soufflés, pancakes, pies, pasta, casseroles and
curries, and a spicy kedgeree made
without any fish!
