Icy Vegetable Soup Recipe

Serves 6.

Ingredients:

3 tbs. salad or olive oil

1 large bell pepper (green pepper), chopped fine
1 c. cold canned bouillon

2 tbs. lemon juice
3 c. tomato juice

Salt, pepper, to taste
I sm. onion, minced

1 tomato, cut up
I c. celery stalk chopped fine

1 cucumber, diced
 

Methods:
  • Combine all ingredients, taste for seasoning and chill for at least 3 hours.
  • To serve, turn into a glass bowl or chilled tureen, and garnish with a few ice cubes.
