Mikado Salad Recipe

(serves 6)

Ingredients:


3 avocado pears
3 oranges
large bunch of watercress
50g/12oz chopped walnuts
yogurt dressing
 

Methods:
  • Peel and slice the avocados. Peel the oranges and separate into segments. Remove the membrane and pith from the segments.
  • Spoon the yogurt dressing on to each of six salad plates. Arrange the avocado slices and orange slices alternately in a fanlike pattern on the dressing. Put a generous clump of watercress in the centre of each and sprinkle with walnuts.
